DESCOVERING THE SPROUTING
Sprouting consists of an extremely expensive moment in terms of energies, in fact vine has to face with the gems swelling and blossom, so it has to use the starch and nutrient reserves socked up immediately after harvest. The temperature increase, due to the beginning of the spring, when the average is 10-12 C°, represents the x factor prior the gems blossom. Next, “the weeping moment” starts, that is the liquid poured out the xylem vessels, set where the pruning cuts are.
Sprouting looks like a magic: by the blossom gradually into 10 days, from the first gem to the others asleep. This moment is still a little, big surprise in every vineyard, never the same in all production areas, the sprouting phase, in fact, is strongly influenced by the climate and, therefore, can change from year to year, due to the sun exposure, soil drainage, vines age and time of pruning. No wonder, indeed, that among different grapes, there could be also a delay of 20 days!
