Grape Variety: 100 % Fiano
Production area: Our own vineyards in Montefalcione
Wine-making techniques: The late harvest of the grapes takes place in November, because the early morning mists of this period favour the development of botrytis with the resultant increase in concentration of sugars and flavours. The gentle pressing and fermentation of the must for 20 days at 18°C is followed by maturation in barriques of French oak for at least 24 months. It will continue to improve in bottle.
Tasting notes: A dessert wine, golden yellow in colour with a rich complexity of aromas: camomile, honey, ripe peaches, acacia flowers and vanilla. Well structured on the palate with an elegant personality mingling sweet notes, austere acidity and a finish redolent of hazelnuts.
Food pairings: Ideal with cheeses and also honey, jam and cakes. Serve at 14°C.
